Let's Get Cooking
The evening will begin with a fresh ricotta-making demonstration. Participants will help prepare a Bolognese sauce for the pasta course. Once the sauce is cooking, participants will be given the ingredients to prepare the pasta dough. The instructor will then walk the class through the process of forming the dough. The pasta will need to rest before it is rolled out, while this is happening, the participants will enjoy a glass of wine with a variety of appetizers (Ie. artisan bread, marinated beets, cheese selections including the fresh Ricotta, etc.). Once the pasta is rested, participants will all receive a rolling pin and the proper equipment for shaping the dough. After the pasta is rolled the chef will instruct the class in a variety of pasta cutting and shaping techniques. This will include stuffed pasta, featuring fresh ricotta and a butternut squash filling. The class will then move on to eating dinner. To conclude the evening, the class will make and enjoy a raspberry tiramisu.
